We are currently seeking a Pastry Chef to join our team. permanent full-time position at our Simberi Operation. Your work location is Papua New Guinea, working a 15/13 Roster from Kavieng, Rabaul, Port Moresby, Lae, Mt Hagen, Madang, Goroka, Alotau, Wapenamanda, Popondetta, Hoskins, Vanimo, Wewak or Tabar group of Islands. (Locals are encouraged to apply).

Reporting to the Head Chef, the primary responsibility for the management and day to day operations of the Kitchen. Ensure the highest standards of hygiene, health and safety and services to deliver clean, messing, and related facilities to employees/guests.

The role incumbent and manager will identify and review the specific compliance requirements of the role.

The opportunity

  Technical Accountabilities

  • Assist to oversee the running of the camp kitchen and catering facilities.
  • Ensure appropriate supervision and training is provided to all national and local employees including addressing position duties, employee hygiene, food separation in preparation and storage and appropriate PPE.
  • Ensure camp (including power and water supply) maintenance is conducted in a timely and cost-effective manner.
  • Ensure menus conform to a monthly cycle and are revised regularly.
  • Ensure the food selection includes healthy choices. Maintain food and service quality.
  • Ensure the kitchen, recreation area, dining area, rooms (including insect screening) and balconies are always clean and tidy and that all services are functioning.
  • Ensure all refrigeration (including temperature monitoring) and air conditioning is regularly inspected, cleaned, and maintained in good working condition.
  • Ensure all waste is managed and disposed of in an appropriate manner.
  • Function planning and execution
  • Ensure tasks allocated are executed in a timely manner
  • Work in collaboration with Camp Superintendent to order and manage stock usage and rotation
  • Pay attention to the incumbent in charge of the Catering & Servicing department and safety and working standards, including the correct operation of all facilities including kitchen utensils and machines.
  • Record and report any undesired events, unsafe practices or near misses to the Camp Superintendent. Drive HACCP in the mess operation.
  • Comply with established OH&S policies and practices.
  • Take responsibility for reporting of incidents, including any injury or near miss to the OH&S Department and Safety Committee in a timely manner.
  • Regularly communicate with subordinates regarding new OH&S initiatives and OH&S statistics.
  • Carry out other operational tasks as required.

 Scheduling Accountabilities

  • Promote and adhere to the company’s internal methodologies, policies, procedures, and standards by consistently maintaining a high quality of work across all allocated functions.
  • Interpret legislation, government standards and agreements. Provide input/informed commentary, improvement opportunities and areas of risk to management.
  • Be accountable for the quality of work output from the unit/department through an ongoing monitoring and audit process.
  • Ensure compliance with all statutory and company standards through training and development of staff and promoting by example.
  • Ensure all administration functions and tasks associated with the position are undertaken and completed in a timely and efficient manner.
  • Identify training requirements of subordinates through consultation with the employees and the Simberi Gold Company Training Department.
  • Using established training methods and in conjunction with the Training Department train subordinates to achieve competency in the area identified and within the scope of their position.
  • Participate in training provided by the business.
  • Comply with established environmentally sustainable measures to not adversely impact on the natural fauna, flora, freshwater resources, and marine life within the bounds of Simberi Island.

  • Managing outputs and development of the team and all Team Members.
  • Ensure staff resources are maximised, and staff members undertake appropriate training and development, so they are skilled efficiently to perform allocated duties.

Essential

  • Behaviour consistent with St Barbara’s Values
  • Qualified Chef or catering/hospitality qualification – Certificate 3 in Commercial Cookery, Certificate 3 in Hospitality, and a Food Safety Supervisor Certificate.
  • Two (2) years’ experience in a similar role.
  • Experience with bulk food suppliers including planning needs, ordering, inventory management and production.
  • Ability to manage a team of national and local employees including supervision and training.
  • Well-developed communications, presentation, and interpersonal skills.
  • Well developed “team oriented” approach to the achievement of outcomes

 Desirable

  • Ability to multi-task
  • Excellent time management skills
  • Strong oral, written and visual communication skills
  • Two years’ supervisor experience
