The Role

As the Sous Chef joining our Lady Loretta Village/Mine Site, you will be responsible for providing an efficient and cost-effective food service, with the smooth day-to-day operation in a Commercial Kitchen consisting of shifts over Breakfast & Dinner on a 14/7 day roster, with consistent superior guest focus at the forefront of all activities. As a Chef you will achieve this through implementing a strong service focus and ensuring that efficient standards and practices are employed. You will cook dishes that will delight our customers with their taste and timely delivery.

You will assist in overseeing all kitchen employees, including training and performance development. You will be responsible for providing smorgasbord/buffet style dining & breakfast for guests residing at the Village. You will also liaise with front of house staff to ensure smooth and efficient delivery of daily services.

 

About You

Must have experience in remote locations and experience in similar set up facilitating 20,000 meals a month. The position includes the below responsibilities:

  • Food preparation and presentation (breakfast, crib and dinner)
  • Adherence to dietary requirements (allergies, special requests)
  • Management of stock ordering, rotation and stocktaking
  • Maintaining a clean kitchen, equipment and utensils
  • Adherence to legislated food hygiene and general safety practices
  • Assisting the broader team as required

In order to be successful in this role you will need:

  • Certificate III Commercial Cookery
  • Food Safety Supervisor Certification
  • Min 3 years post-qualification experience in executing all aspects of kitchen operations and food preparation and service, preferably in a remote environment
  • A commitment to genuine, friendly & professional customer service
  • Ability to work in a fast-paced, challenging & time-sensitive environment
  • Pride in personal appearance & hygiene
  • Proven experience in electronic purchase ordering and cost management
  • Proven experience in planning and developing menus
  • Current First Aid Certificate is highly desirable
  • HACCP experience essential, with a high emphasis on food hygiene    
  • Current Drivers Licence.
  • MMQ Scan and Full Medical - Can be arranged prior to start
