The Role

As the Head Chef you will be responsible for the food & dining experience at one of our three unique locations, The Station. There are three outlets under this role, including the Steakhouse restaurant, the staff kitchen and the casual eatery. You will construct the menu and be responsible for providing an efficient and cost-effective food service balanced with utilising high quality, local produce. You will be responsible for managing, rostering and training kitchen staff. You will be heavily involved with the recruitment process for these staff, with support from People & Culture.

Duties

  • Lead and develop your Kitchen Team
  • Ensure the kitchen complies with sanitation regulations and safety standards
  • Hands on whilst controlling and directing food preparation
  • Foster a climate of cooperation and respect within the team
  • Maintaining superior guest focus at the forefront of all activities
  • Liaise with activities department and front of house to ensure a smooth service

Skills & Experience

  • Proven experience managing an a la carte kitchen
  • A passion for using fresh native ingredients and delighting guests
  • Strong communication and feedback skills
  • Ability to mentor, nurture and create a good working culture within team
  • Sound knowledge of HACCP and ability to maintain cleanliness and food safety regulations
  • Certificate III in Commercial cookery or higher
