About us:

The story of Toby's Estate began in 1997, in the grungy streets of Woolloomooloo, armed with Mum’s garage, a beat-up coffee roaster and passion on tap, we set out on a wild adventure of business and coffee discovery. Not concerned with the frills of it all, but just that we were consistently consistent in roasting the tastiest coffee we could and treating all the people in our world like family.

Fast forward 26 years we’re an energetic team and merry band of misfits united by a common passion for doing amazing things, and at the forefront of pushing the limits of premium specialty coffee.

What’s on offer

As our Café Manager, you’ll lead a team and a café that’s already got great momentum. With a strong team in place, positive sales records, and a great focus on coffee quality, we’re now looking for someone to consolidate those gains and drive performance even further.

  • Take ownership of an established flagship location with high growth potential
  • Collaborate with a passionate, experienced support network across Australia and New Zealand
  • Work with a tight-knit on-site team - Assistant Manager, Barista, and Cook (and a few part casuals too)
  • Partner with senior leaders to improve systems, performance, and cost control
  • Access to recharge leave (5 additional days off annually), career pathways, and development support across the broader business

About the role

Your focus will be on consistency, cost control, team development, and leading by example every day.

  • Drive operational excellence across FOH, coffee, kitchen, and customer experience
  • Build rhythm and momentum within the team while maintaining high standards
  • Influence labour costs and productivity with a commercial lens
  • Strengthen relationships with senior leaders, landlords, and sales managers
  • Evolve ways of working alongside the Café Operations Manager, including onboarding and induction improvements
  • Balance weekday and weekend presence while developing a high-trust, high-performance team model
