About us

The story of Toby’s Estate began in 1997 with a garage, a roaster, and a relentless passion for great coffee. Fast-forward 26 years, and we’re a leading specialty coffee roaster in Australia, known for bold flavours, good people, and a no-frills, high standards approach to everything we do.

Our Newstead café is now about one year into operation and it’s ready for its next cafe manager. You’ll be part of Toby’s Estate’s wider team based in Sydney, a collaborative and supportive crew with strong coffee knowledge and a shared ambition to lead the specialty coffee industry from the front.

What’s on offer

As our Café Manager, you’ll take the lead in build off a team and a café that’s already got great momentum. With a strong team in place, positive sales records, and a renewed focus on coffee quality, we’re now looking for someone to consolidate those gains and drive performance even further.

  • Take ownership of an established flagship location with high growth potential
  • Collaborate with a passionate, experienced support network across Australia and New Zealand
  • Work with a tight-knit on-site team - Assistant Manager, Head Barista, and Cook (and a few part timers too)
  • Partner with senior leaders to improve systems, performance, and cost control
  • Access to recharge leave (5 additional days off annually), career pathways, and development support across the broader business

About the role

This is not a start-up café - it’s an established site with real potential. Your focus will be on consistency, cost control, team development, and leading by example every day.

  • Drive operational excellence across FOH, coffee, kitchen, and customer experience
  • Build rhythm and momentum within the team while maintaining high standards
  • Influence labour costs and productivity with a commercial lens
  • Strengthen relationships with senior leaders, landlords, and sales managers
  • Evolve ways of working alongside the Café Operations Manager, including onboarding and induction improvements
  • Balance weekday and weekend presence while developing a high-trust, high-performance team model

Who are we looking for?

You’ll bring a confident, customer-focused leadership style with maturity, curiosity, and commercial awareness. You may be a senior front of house, assistant manager or a current cafe manager - we open to anyone ready to step up that is proactive, resilient, and committed to growth. and the rest:

  • Demonstrated experience in café or hospitality operations, with a strong service mindset
  • Calm under pressure, with a proactive, solutions-focused approach to challenges
  • Genuine team player - leads from the front, coaches with empathy, and builds others up
  • High emotional intelligence paired with commercial acumen and operational awareness
  • Proven leadership capability or a strong ambition to step into people leadership
  • Uncompromising standards in service, coffee quality, pace, and presentation
  • Self-starter with collaborative energy and natural initiative
  • Confident engaging across stakeholders and eager to contribute to the wider Toby’s Estate business - not just the café floor
