The Dolphin is a Surry Hills institution - in all the right ways, full of character, and always buzzing. With multiple bars across multiple levels, we’re looking for an experienced Bars / Venue Manager to take ownership of all things bar-related and keep the drinks (and good vibes) flowing.

About the Role
As the Bars Manager, you’ll oversee the operations, staffing and efficiency of all bars across The Dolphin, including: Main Bar, Public Bar, Level 1 Bar & Level 2 Bar.
This is a hands-on role for someone who loves being on the floor, coaching teams in real time and setting the standard for service, speed and atmosphere.
What You’ll Be Doing
- Managing day-to-day bar operations across all levels
- Leading, training and developing a diverse bar team
- Running stock takes, ordering and stock control
- Delivering engaging bar training and upskilling staff
- Building smart rosters with a strong understanding of wage costs
- Rotating staff effectively across the venue to maximise efficiency
- Maintaining service standards while keeping the vibe high
- Being a visible, approachable leader for both staff and guests
About You
You’re a natural leader who knows how to balance structure with fun.
You will bring:
- Proven experience managing bars in a busy venue
- Strong team leadership and people management skills
- Confidence in rosters, wage control and operational efficiency
- Excellent communication skills — clear, calm and motivating
- A passion for drinks, service and guest experience
- The ability to grow, develop and retain great bar teams
- A hands-on, lead-from-the-front approach
- A warm, engaging style with guests and staff alike
