We are currently seeking a Pastry Chef to join our team. permanent full-time position at our Simberi Operation. Your work location is Papua New Guinea, working a 15/13 Roster from Kavieng, Rabaul, Port Moresby, Lae, Mt Hagen, Madang, Goroka, Alotau, Wapenamanda, Popondetta, Hoskins, Vanimo, Wewak or Tabar group of Islands. Reporting to the Head Chef, plays a crucial role in maintaining morale by preparing high-volume, quality baked goods, including breads, cakes, pastries, and buffet desserts for hundreds of workers. This role requires advanced baking techniques combined with the physical stamina to work long, fast-paced, and often early-morning shifts
Everyone at St Barbara Limited is required to understand and act in accordance with St Barbara’s Values, Code of Conduct and all Company Policies and meet all relevant internal and external compliance obligations.
The role incumbent and manager will identify and review the specific compliance requirements of the role.
The opportunity
Responsibilities
- Preparing large quantities of bread, pastries, cakes, muffins, and cookies to meet daily requirements.
- Innovating and experimenting with new recipes, flavour combinations, and seasonal menu items.
- Managing the pastry section's inventory and ordering ingredients while minimizing wastage.
- Ensuring strict adherence to WH&S (Workplace Health and Safety) legislation and HACCP food safety standards.
- Maintaining a clean and organized workstation, including the proper maintenance of equipment like dough mixers and industrial ovens.

We would love to hear from you if you have:
Essential
- Behaviour consistent with St Barbara’s Values
- Certificate III in Patisserie or equivalent commercial pastry qualification.
- A current Food Safety Certificate is typically required.
- Successful completion of pre-employment medical checks, including fitness and drug/alcohol screenings
- A minimum of 2-5 years of experience as a Pastry Chef or Baker in a high-volume, fast-paced commercial environment, such as a large hotel, catering business, or industrial bakery.
- Ability to work autonomously in a small team setting, often without direct supervision.
- Experience in mining camps or remote locations is highly regarded
- Capability to work long shifts and lift up to 15-20kg repeatedly.
Desirable
- Strong skills in lamination, dough shaping, cake decorating, and dessert presentation.
- Ability to produce high volumes under strict deadlines.
- Ability to adapt to different team environments and remote living conditions.
