A Rare Opportunity: Venue Manager – Lua by Luke Nguyen
We are seeking a highly experienced and charismatic Venue Manager to build and lead a formidable team, whilst preparing for the critical launch and ongoing success of the venue.
Located in a prime position within the new Sydney Fish Market, the venue oozes style, yet has an open, informal and welcoming design, incorporating sensational water views, a mix of internal and external dining, an exciting open fire pit, and a well-proportioned bar, to encourage customers to enjoy Lua’s incredible location and strongly influenced Asian-orientated menu.
This role will suit a dynamic, commercially astute, hospitality professional who thrives in busy dining environments, who loves building teams, creating unique dining experiences, and enjoys establishing a successful hospitality business of significant scale.
Your Responsibilities
As Venue Manager, you will:
- Lead all restaurant & bar operations to ensure exceptional end-to-end guest experiences
- Oversee day-to-day service and drive strategic operational excellence
- Recruit, train, mentor and inspire a high-performing front-of-house team
- Support and develop activations and non-event-based initiatives
- Build strong relationships with internal departments and external partners
- Manage labour and restaurant forecasting, rosters and operational budgets
- Champion Lua’s culture, service philosophy and commitment to excellence
What are we looking for?

You’ll bring:
- Minimum 5 years’ management experience in a similar role (Venue/Restaurant Manager, Operations Manager or Senior Operations)
- Strong leadership qualities – organised, flexible, a great coach and communicator
- A genuine love of hospitality, dining trends, service delivery and team development
- Proven success building, training and motivating service teams
- Excellent communication, presentation and interpersonal skills
- Strong computer literacy – MS Office, restaurant POS/CRM systems
- Solid exposure to budgeting and financial controls
- A results-driven mindset with a “hands-on”, can-do attitude
