For more than 55 years, Doltone House has been at the heart of Sydney’s hospitality and events landscape—where family tradition meets innovation, and where a passion for service creates unforgettable experiences. Today, that legacy has evolved into Doltone Hospitality Group (DHG), a multifaceted powerhouse delivering hospitality excellence across major venues, iconic cultural institutions, immersive dining precincts and international markets.

From the Sydney Opera House to Customs House, Sydney Town Hall, Darling Island and Jones Bay Wharf. From the innovative 3,000sqm Hay St Market to our new hospitality ventures at the redeveloped Sydney Fish Market—DHG continues to redefine experiences across the city’s most visited destinations. Beyond Australia, our Ovation brand delivers world-class hospitality to stadiums, hospitals, schools and corporate environments across New Zealand and now Sydney.

As Senior Retail Marketing Manager, you will report to the GM of Marketing and play a key role in shaping DHG’s marketing strategy and brand execution. This is a rare opportunity to lead precinct and retail marketing at a group level—launching new destinations, delivering standout campaigns, and creating exceptional customer experiences.

Your Key Responsibilities:

  • Lead the end-to-end marketing strategy for DHG’s Venue & Retail portfolio, aligned to brand vision and commercial priorities.
  • Develop positioning, customer segmentation, value propositions, and compelling brand narratives across diverse venue and retail concepts.
  • Oversee marketing for Hay St Market and DHG’s venues, restaurants, bars, lounges, retail outlets, and destination properties, driving footfall, dwell time, and repeat visitation.
  • Lead marketing strategy, campaigns, and go-to-market launches for new ventures, including LUA at Sydney Fish Market and future DHG developments.
  • Deliver integrated campaigns across digital, social, PR, OOH, partnerships, influencer activity, and in-venue activations.
  • Own creative and brand direction across the portfolio, ensuring cohesive storytelling, visual identity, and precinct-wide impact.
  • Partner closely with venue managers, operators, tenants, culinary teams, and external agencies to deliver aligned, high-performing outcomes.
  • Use customer insights, footfall data, spend analysis, and campaign performance to optimise strategy and improve ROI.
  • Provide clear performance reporting, insights, and recommendations to senior leadership, working closely with the GM of Marketing.
  • Manage budgets, suppliers, timelines, retail collateral, signage, and in-market standards with a focus on operational excellence.

Your skills and experience:

  • 7+ years’ experience in retail, precinct, hospitality, or lifestyle brand marketing.
  • Demonstrated ability to set clear strategy and deliver high-quality, hands-on execution.
  • Experience managing complex, multi-venue or multi-brand portfolios.
  • Strong commercial acumen, with a passion for creating standout customer experiences.
  • Highly collaborative, with proven ability to influence and manage tenants, internal teams, and external partners.
  • Organised, adaptable, and confident managing multiple projects in a fast-paced environment.
  • Strong storytelling, visual, and brand-building capability across channels.
