The Role
Located in the heart of Outback Queensland, Discovery Resorts – Undara is a unique destination offering high‑volume food and beverage experiences for resort guests, tour groups and visitors. This role requires a confident, hands‑on Venue Manager who can take full ownership of all food and beverage operations and lead a team in a remote, fast‑paced environment.
This is a leadership role suited to an experienced hospitality professional who thrives on accountability, team development and service excellence. You will be responsible for driving operational performance, maintaining high standards and delivering exceptional guest experiences across all outlets.

What You’ll Be Doing
- Oversee end‑to‑end food and beverage operations across the resort
- Lead, train, mentor and roster staff while building a strong, positive team culture
- Drive service excellence and manage guest feedback effectively
- Work closely with the kitchen and tours teams to deliver seamless group dining experiences
- Manage stock control, ordering, labour costs and operational budgets
- Maintain profitability while upholding high service and presentation standards
- Ensure compliance with food safety, WHS, statutory and brand standards
- Remain calm under pressure and lead a solutions‑focused, resilient team
What You’ll Need
- Proven experience as a Venue Manager or senior food and beverage leader
- Strong hands‑on operational leadership skills
- Experience managing costs, labour and stock in a high‑volume environment
- Ability to lead, motivate and performance‑manage teams
- Excellent communication and stakeholder‑management skills
- Strong understanding of food safety and compliance requirements
- A proactive, adaptable leadership style suited to a remote location
- Passion for hospitality and delivering memorable guest experiences
This is a remote role, where you will be living and working at Undara. As such, please consider the reality of living in a remote location for an extended period of time.
