The Role:

Reporting to the Executive Chef, as Sous Chef you will assist to foster a motivated team who provide the highest quality food experience that celebrates the best of Australian cuisine. Your responsibilities will include: 

  • Pioneering the guest satisfaction at CC’s Bar and Grill by delivering exceptional culinary experiences. 
  • Cultivating a culture of innovation and a penchant for pushing culinary boundaries. 
  • Providing hands-on leadership during all service periods and shifts. 
  • Collaborate closely with the F&B Service leadership team. 
  • Ensuring rigorous departmental training aligns with our high standards. 
  • Foster seamless communication and coordination with all hotel departments. 
  • Overseeing workplace health and safety procedures. 
  • Contribute to the development of seasonal menus, promotional packages and event offerings that reflect current trends and guest preferences 
  • Partner with the Executive Chef on budgeting, forecasting and cost controls to support financial objectives 
  • Support the effective procurement, production and presentation of all culinary delights 
  • Lead and maintain food safety and hygiene practices, ensuring compliance with all regulatory requirements
  • Inspire and cultivate a highly engaged team with a strong local reputation, attracting and retaining top culinary talent

About you:

Your talents include the following:

  • Minimum Certificate 3 Commercial Cookery
  • Proven leader who will drive the kitchen brigade and foster a positive and disciplined culture to produce award winning cuisine.
  • Team player who can coordinate with the floor team to deliver elevated guest experience
  • Experience in the control of food and labour costs
  • Well-developed communication and time management skills
  • A strong visionary with an ambitious expectation of guest service
